We were shown the old bucket and new tube system of collecting sap from the trees. In the sugar shack we were shown the boiling down of the sap into syrup. There are different grades of syrup from light to dark. The more you cook it the darker it gets. If you over cook the syrup it will crystallize on the bottom of the jar. Sap can be boiled down into more products, such as candy or maple butter. Note: It takes around 40 litres of sap to make 1 litre of syrup.
